| Antibacterial In today's Japanese market there exists a vending beverages industry. Beverages in vending machines are sold everywhere. Emulsifiers are used in these types of beverages. Emulsifier's function is generally known as emulsification, which causes an inhibitory effect of protein denaturalization. Emulsifiers are also used for their antibacterial effects. To this day, emulsifiers having an antibacterial effect is generally known as SE (Sucrose esters of fatty acids), and for the past 20 years, other forms of emulsifiers in addition to SE had not found. Presently, we have found that DP-95RF has a better antibacterial effect than that of SE. This emulsifier's concentration is 300 to 1500ppm in coffee and 2000 to 3000ppm in corn soup and shiruko.
This table shows the antibacterial effect of DP-95RF and SE, a test displaying minimum inhibitory concentration (MIC) by medium. Decomposition of beverages is caused by B.stearothermophilus, C.thermoaceticum, C.thermosaccharolyticum, C.thermohydrosulfuricum, and so on. Consequently, the antibacterial effect in B.stearothermophilus is 20ppm for both DP-95RF and SE, C.thermoaceticum is 4ppm for DP-95RF or 6ppm for SE, C.thermosacharolyticum is 10ppm for DP-95RF or 20ppm for SE, C.thermohydrosulfuricum is 35ppm for DP-95RF or 25ppm for SE. DP-95RF has an antibacterial effect equal to SE. |

This table shows the application to corn soup, changing the sterilization condition. Consequently, the antibacterial effect of C.thermoaceticum is 2000ppm for SE in the case of only Fo=50, but is 2000ppm for DP-95RF in the case of Fo=30, Fo=40, and Fo=50. From this result, it is possible to ease the sterilization condition by means of adding DP-95RF without affecting the corn soups flavor. |
